Avocadooooo… avocadooo… I think if I have to chose one food stuff which I have to eat every day for the rest of my life, I would go for avocados. They are just so delicious, healthy, filling and you can use them in so many different dishes. Normally, I eat them raw, with tomatoes and peanuts, as a pasta sauce, in pesto, in a salad, as a soup topping or simply on bread. Well, not this Saturday! This Saturday I went for Avocado-Gazpacho! To be honest, I have never really been a fan of the traditional Gazpacho. I cannot even explain you why, I guess I just don’t like the combination of “cold” and “tomatoes”. However, today was a really warm day and I was craving something fresh. I went to the vegetable shop and like always I was checking the avocados for their ripeness. It is already kind of a ritual because I eat them almost every day (Someone might call me an addict). And what shall I say? They were exactly on point. Not too soft, not too hard and still 100% green from the inside. So I was forcing my brain to think fastly about what I could prepare with them and I realized that it has been a loooong time since I made an avocado soup, so the decision was easy… And honestly, this dish was delicious.. But what else to expect since everything with avocado is delicious. Okay, enough.. before I start writing a poem about my love for this green, little plant, I will share this recipe with you. Oh btw, did you know that botanically an avocado is a berry?
Serves 2 (double the recipe, if more people):
- 1 avocado
- 1 cucumber
- 1/4 cup olive oil
- 2 tsp sea salt
- 1 garlic clove
- 1/2 lemon juice
The really great thing about this soup is that it is super simple to prepare and it is also perfect when you have to save money. Substitute some olive oil with water if you want it lighter.
- Peel the cucumber and remove the seeds
- Put all the ingredients in a blender
- Blend everything and serve the Gazpacho in a bowl
- Top with olive oil and a bit lemon juice
