Herbs-Tofu Salad


Lately, I have been trying to become more fit. Well, I have tried it a lot of times, but recently I really take it seriously. I cutted out most wheat, refined sugar, dairy products and eggs of my diet and I must say I feel really good! I am not too strict with this though, if I am invited somewhere I would still eat everything they would serve me (except for meat of course), however, I am trying to adapt my groceries. I have always been interested in nutrition, but I must admit that I don’t have the best self control and hence, I also used to eat a loooot of crap. Anyway, recently, I got really motivated to eat more healthy because I started a long distance school to become a dietitian and Heilpraktikerin. The material they provide us is super interesting and made me realize how we endanger our body by simply eating “bad things”. For example, one of the most efficient preventions of western diseases can be having a balanced diet. How that diet exactly looks like is discussable and will probably stay a highly sensitive topic. I really tried to inform myself about it and read (listened to) books like “The China Study”, “Weizenwampe: Warum Weizen krank und dick macht” and “Darm mit Charme” next to the study material. I don’t really know where I position myself in this debate, but I am very sure that cutting out the above mentioned food stuff will definitely improve my health. Anyway!! Let me introduce you to one salad which goes hand in hand with this experiement – the herbs-tofu salad. This salad is gluten free (depending on the soy sauce you use), vegan and full of proteins. Sounds good? I assure you, it was!


  • one handful mint leaves
  • one handful parsley
  • 1 avocado
  • 1 tomato
  • seeds (I used a seed mix – but you could use just any)


  • 1 block fresh tofu (buy the fresh options in the asian stores. They taste amazing and in my opinion so much better than the supermarket one)
  • 2 tbsp soy sauce (check the ingredients first)
  • 1 tbsp agave syrup
  • 1 tbsp sesame oil
  • 1 garlic clove


  • 1 tbsp lemon juice
  • 1 tbsp agave syrup
  • 1 tbsp sesame oil
  • 2 tbsp soy sauce


  1. Start by draining the tofu
  2. After it has lost water marinate it in the mixture of agave syrup, soy sauce, garlic and sesame oil. Let it sit for about 30 minutes
  3. In the meantime, prepare the salad and cut the herbs into small pieces and the tomato and avocado in slightly bigger pieces
  4. Mix all the salad ingredients together or arrange layer for layer
  5. Continue by preparing the dressing: just mix all the dressing ingredients in a small bowl and put it over the salad
  6. After the tofu has been marinated fry it in a pan until golden
  7. In the end, put the tofu on the salad and top it with the seeds
