Summer Pasta Salad

Hey guys!

I am back in Barcelona for the weekend and the weather is marvelous. I guess Barcelona is happy that I am here.. Kidding.. But the sun is shining and I am thinking of taking a long walk before meeting some friends. I am really happy to visit my boyfriend these days and be in my (our) flat with my (our) kitchen, my (my) utensils and sleep in my (our) bed. It always feels great to be home. We planned to be productive this weekend and I want to look for jobs for October and he will look for Masters. We are so much more productive in this when we are together. I arrived yesterday in the evening, but I have already made hundred (three) different smoothies and today I prepared one of my favorite pasta salads which I would like to share with you. I ate it once at the 18th birthday of a friend and recreated it regularly ever since. It is my standard dish to bring when I am invited for a barbeque, a birthday or any other occasion and I promise you, so far everyone loved it.

So please: Let me introduce you to the best (yes, this salad makes me overly confident) salad in this world:

Serves 4 persons:

  • 250 g pasta
  • 4 handful rocket salad
  • 1 cup dried tomatoes
  • 1 cup cherry tomates
  • 1/2 cup olives
  • 1/2 cup seeds
  • 2 garlic cloves
  • 5 tbsp olive oil
  • 1 tsp seasalt
  • optional: avocado, parmesan cheese

  1. start by pickeling the garlic in olive oil, add sea salt and let it rest for 1 hour
  2. cook the pasta after package instruction and let it cool down (to make it faster you can also refresh it in cold water)
  3. put rocket salad, pasta, dried tomatoes, cherry tomatoes and olives in a bowl
  4. add the olive oil (without the garlic cloves) and mix everything
  5. add the seeds on top (I used sunflower seeds out of the simple reason that it is budget friendly, but actually roasted pine nuts fit also super good)
  6. Share it with your loved ones and enjoy!
