Not Another Green Pesto Recipe


Last weekend we have been in Lisbon and spent some wonderful days there. This city is amazing and has so many beautiful places and restaurants and street art and cafes and yes.. I could go on forever. The first day it was raining a lot, so we sat down in a little cafe, played cards and tried the local sweet: Pastéis de nata. They are sooo delicious I could have eaten easily 20 of them. Luckily, I could control myself since they are very unhealthy and just… ate… 16… (well.. at least during the whole weekend, but seriously… I thought counting them was a good strategy to reduce the intake of this deliciousness, but no.. Just made me feel more guilty). Everytime, when we saw a different Pasteleria we said: Oh look! Maybe they will taste different here. I think we should try! Self-control is obviously not one of my strenghts. To counteract my accumulated guilt feeling of being so unhealthy the weekend I want to share with you a healthy recipe of broccoli pesto! I know it is already the second green pesto recipe, but honestly, are there enough pesto recipes ?-  and in other words: can you ever eat enough pesto?? This recipe is also super budget-friendly and goes perfectly with Pasta, but also salads and on bread.


For the Pesto:

  • 1 handful peanuts
  • 1 handful broccoli
  • 2 handful spinach
  • 4 tbsp olive oil
  • 1 pinch of salt
  • 1 avocado
  • 1 tbsp lemon juice



For making the pesto you just need to mix all ingredients in a blender. If the texture is too firm you can also add more oil or a bit of water. When the pesto is ready, fill it into a jar and cover it with a bit of olive oil and lemon juice, so it will not turn brownish. I really like the taste the peanuts gave to the pesto and it is also the cheapest option to go for. If you like it more fancy, macadamia nuts and pine nuts fit very well as well.
