Today is another cold day in Barcelona. I feel a bit out of energy today, so after returning home I immediately made it myself comfortable on the sofa and now I am warming my feet in front of our heater. I am waiting for my boyfriend to arrive because we want to go out for dinner tonight. So, in the meantime I thought I am telling you a bit about vegetarian proteins until he arrives home. Whether you are vegetarian, vegan or you just like to substitute some dishes with a veggie version, it is always important to keep in mind, which food is good for you. Quinoa, for example, is one of the most amazing foods in the world. It is not just glutenfree and super healthy, but it is also a good source of proteins. Other vegan protein suppliers are peas, chickpeas, sesame seeds, sunflower seeds, pumkin seeds, Tofu, nuts, beans, spinach….If you don’t know how to use them, here just some ideas:
- You could make a soup out of peas or just add them into your veggies.
- Chickpeas are amazing for making hummus or falafel.
- You could use seeds as a topping for salads or soups
- Use Tofu as a meat substitute in a curry or vegetarian Bolognese
- Nuts are an awesome snack at work
- Beans are good as everything: as a soup, dip, burger….
- Spinach can be used in smoothies, salads, side dish
However, on sunday, I wanted to mix some of the above mentioned ingredients and created an energy giving “Buddha bowl” in order to get some valuable nutritions.
For two bowls
- one handful spinach
- 200 g Tofu
- 1 avocado
- 1 cup quinoa
- 1/2 cup of sesame seeds
- 1/2 cup of sunflower seeds
- 1 cup of chickpease
- 1 tomato
- 2 tsp olive oil
- 1/2 lemon
Cook the quinoa regarding the cooking instructions. After it is ready, place it into a bowl and add all the other ingredients except for the Tofu. Then drain the Tofu and fry it until crispy and add it into the same bowl. In the end, top it with the seed combination, some olive oil and lemon juice. Feel free to substitute the quinoa with lentils, the chickpeas with beans, the Tofu with Tempeh or the sunflower seeds with pumpkin seeds. Sure, it will taste super great.
